It is hard to understand as i am sure plants have nothing like
a muscle or tendon to enable them to move stalks or branches.

I don't know about muscles or tendons in plants, but they do have something similar.
Couple of years back I had a large tropical plant that you could see move and rotate towards the sunlight.
Very slow ofcourse, but relatively fast for a plant, since you could actually watch it move in realtime.
To move the entire leaf and twist the stem it does need muscles of some kind.
It was a giant Anthurium with leaves of half a meter in size.
